Where salt cannot do the job
Salt thickening only works on certain surfactant systems and fails completely in high-electrolyte or high-alkali formulations. Xanthan gum thickens almost anything, holds its viscosity from pH 3 to pH 12, survives high salt loads, and does it at 0.1 to 0.8% of the batch.
Suspension is the real magic
Xanthan builds a weak internal structure that holds particles in place without visible thickness, so scrubbing beads, exfoliants, pigment or undissolved actives stay evenly distributed for months instead of settling into a hard layer at the bottom of the bottle. The gel shears thin when squeezed, so the product still pours easily.
Uses
Cream cleansers and scrubbing gels, thickened bleach, hand sanitiser gel, cosmetic lotions, salad dressing and sauces in food grade, and drilling fluid. In gluten-free baking it replaces the structure gluten would have provided.
Dispersing without lumps
Never tip it into still water. Disperse it into glycerine or oil first, or sprinkle very slowly into a strong vortex. Once a lump forms with a hydrated skin around it, no amount of stirring will recover it.
